What to grow (by season & purpose)

Leafy greens (nitrates, folate, Mg, K)
Oct–Mar: spinach (Pusa Bharati), bathua, methi (Pusa Early Bunching), sarson saag, kale (Dwarf Blue Curled), rocket/arugula.
Mar–Nov: amaranth (GA-2 red & green), moringa leaves (PKM-1 tree), malabar spinach (for heat).
Beans & pods (prebiotic fiber, polyphenols)
Feb–Apr & Sep–Oct: French bean (Arka Komal), cowpea (Pusa Sukomal), hyacinth bean (avarai), cluster bean/guar.
Jun–Jul: yard-long bean (Sahib Long), okra (for brain-friendly mucilage & folate).
Crucifers (sulforaphane, vit K)
Aug–Nov sowing: broccoli (Palam Samridhi), cauliflower (Pusa Sharad/Pusa Himjyoti by slot), cabbage, radish & turnip for greens. Also seed a bed for mustard microgreens year-round.
Medicinal & aromatic herbs (terpenes, calming tea)
Tulsi (Rama/Shyama), rosemary, lemon balm, lemongrass, peppermint, spearmint, sage.
Mar–Aug: hibiscus sabdariffa (leaves & calyces for tea), marigold (lutein petals).
Seed spices & oilseeds (ALA omega-3, minerals)
Oct–Nov: coriander (Pusa Ajmer Cori-163) for leaf + seed, fennel (Gujarat Fennel-2), dill, fenugreek, nigella (kalonji), cumin (better on lighter, well-drained beds).
Rabi or spring: flax (T-397) for ALA; harvest young leaves too.
2) Soil & bed prep for nutrient density (Western U.P.)
1. pH & Ca balance: Aim pH 6.5–7.2. If >7.8, blend well-finished compost 8–10 t/acre + 1–2 t/acre gypsum once yearly; elemental S only if lab says so.
2. Carbon & biology: 2–3 t/acre vermicompost + 2–3% biochar (by compost volume) into top 10–15 cm at bed making.
3. Micros that often limit density here: Zn 10–15 kg/acre as ZnSO₄·7H₂O (basal); Boron 1–2 kg/acre as borax once/year in beds for crucifers/leafies; Fe chelate via fertigation if chlorosis appears.
4. Mulch & mycorrhiza: Straw/leaf mulch 5–7 cm; dip plug roots in AMF + Trichoderma slurry at transplant.
3) Fertigation / foliar “clean” program (4R-aligned)
Basal per acre (veg beds):

NPK (12–16:24:16) from organic + mineral blend: e.g., DAP 40–45 kg + MOP 20–25 kg + N through neem-coated urea 20–25 kg split; balance N via fertigation.
Rock phosphate 80–100 kg in leafy/crucifer beds (slow P).
K-Mag (SOPM) 40–50 kg where Mg/S are low.
Weekly fertigation (weeks 2–8):
1st pass: 0.5–0.8% 13-0-45 (KNO₃) or SOP in 2 irrigations/week for sweetness & firmness.
Alternate weeks: 0.2% CaNO₃ for leafies; for fruiting beans use 0.2% MgSO₄ + 0.1% boric acid once at pre-flower.
Biostims (optional): 0.1% seaweed + humic 40–60 ppm in one fertigation/week.
Targeted foliars (evening spray):
Leafies (7–10 day interval): 0.5% KNO₃ or 0.3% KH₂PO₄, + 0.1% Ca chelate once/15 days, + micronutrient mix (Zn:Fe:Mn:Cu:B:Mo as label).
Crucifers (just after head initiation): 0.3% CaNO₃ + 0.1% boron; boosts firmness & vitamin C.
Beans (pre-flower & pod fill): 0.5% KNO₃ + 0.25% MgSO₄.
(Keep total spray volume 150–200 L/acre; avoid mid-day.)
4) Field tactics to push natural sugars (high-Brix)
Sunlight: 30–40 cm intra-row spacing on leafies for light penetration; remove 1–2 oldest basal leaves weekly.
Dry-back rhythm: Irrigate to field capacity, then allow mild dry-down before next irrigation; withhold water 24–36 h pre-harvest for beans/leafies if temps <36 °C.
Potassium timing: Heavier K from canopy close to harvest.
Calcium & Boron: Keep steady → improves transport of sugars into tissues.
Measure: Use a handheld refractometer. Good fresh targets:
Spinach/amaranth 7–10°Bx, basil/mint 8–12°Bx, broccoli 8–10°Bx, beans 7–9°Bx, coriander leaf 6–8°Bx.
Harvest clock: Harvest first light (cool) for leafies, late afternoon (warm) for beans to peak sugars if selling same day.
5) Postharvest to lock sweetness & nutrients
Hydrocool beans & crucifers quickly; leafies → no washing at farm (wash just before cooking), only mist + shade + perforated crates.
Edible coatings: Light aloe gel 1–2% dip on beans/okra.
Herbs: Bundle, stand stems in shallow clean water like cut flowers; cover loosely.
6) Fast, brain-forward farm recipes (U.P. kitchen style)
A) “Triple-Green Saag” (sarson + bathua + spinach)
Blanch 2:1:1 leaves 2–3 min; shock; coarse grind with 1 green chili, 1 tsp roasted flaxseed powder.
Temper: 1 tbsp mustard oil, garlic, cumin, a pinch of methi seeds, finish with lemon.
Why: Nitrates (blood-flow), folate, ALA.
B) Broccoli–Mustard Microgreen Stir-Fry
Stir-fry broccoli florets in mustard oil 3–4 min, stop al dente; top with a big handful of mustard microgreens, toasted sesame + lemon.
Tip: Short cook keeps sulforaphane precursors.
C) Cowpea Bean & Dill Warm Salad
Steam tender pods 2–3 min; toss with chopped dill + mint, lemon, rock salt, crushed roasted peanuts.
High-Brix check: aim >8°Bx on pods before harvest.
D) Coriander–Fennel Brain Chutney
Grind fresh coriander leaves + fennel greens, ginger, lemon zest, a few nigella seeds, jaggery pinch, lemon.
Keeps in fridge 2 days; boosts polyphenols with seed spices.
E) Tulsi–Rosemary–Lemongrass Evening Tea
Simmer lemongrass; turn off heat; add tulsi + a sprig rosemary; cover 5 min.
Calming terpenes without over-boiling (protects aroma compounds).
F) Amaranth Leaf & Flax Paratha
Fine-chop red/green amaranth, knead into atta with 1–2 tbsp flax meal, yogurt, ajwain; cook with ghee.
Iron, ALA, polyphenols.
G) Moringa Leaf Poha (breakfast)
Quick sauté onions, curry leaf, peanuts; add rinsed poha + moringa leaves last 1–2 min; finish with lemon.
7) One-bed, two-month “Brain-Garden” rotation (10×1 m raised bed)
Month 1:
5 m: Spinach line-sown;
3 m: French bean (stake);
2 m: Broccoli (2 rows).
Month 2:
After first spinach cut, resow mustard microgreens in that section (7-day cycle).
Interplant bed edges with tulsi/mint; tuck coriander in any gaps.
Fertigation: Weekly 0.5% KNO₃; CaNO₃ once/15 d for leaf sections; one boron spray at broccoli head-initiation.
Harvest rhythm: Leafies twice/week; beans alternate days; broccoli once; micros every 2–3 days.
8) Simple monitoring checklist (pin in shed)
Every Monday: EC of fertigation (1.2–1.8 mS/cm leafies; 1.6–2.2 beans); pH 5.8–6.2 in tank.
Wed/Sat: Brix on 3 sample plants/section; note weather.
Weekly scout: Interveinal chlorosis (Fe/Zn), blossom-end tissues (Ca/B), pest hotspots → respond with targeted micronutrient/biocontrol, not blanket sprays.
Pre-harvest: 24–36 h mild water stress (temps permitting) + last K push.
